Here's a list of the tenants reported by Cadillac Fairview in 1992, published in the 1993 Canadian Directory of Shopping Centres. I had to guess at where a few of the food listings should be, as they aren't always properly categorized; the list is just a text list of stores, no layout of the mall itself.

Perhaps only 20% of the tenants listed below are still there 30 years later, and even less in their original locations. This was of course before the various renovations and expansions were completed. The mall also used to have more small merchandise kiosks on the third floor, above where the Apple Store is now. The now-ubiquitous mobile stores have yet to become a category.

It's also interesting to see entire categories that are now all-but-extinct: music stores, ticket kiosks, and camera & photo. I haven't heard of many of the below stores.

Oliver and Bonacini is quickly taking over the entire city. I appreciate that they tend to come up with distinct dining concepts rather than repeating the same nameplate—even if all the locations have a certain O&B-ness to them.

But don’t enjoy the monopoly they’re starting to have on sit down dining. One mistake up top and there will suddenly be a lot of retail space up for rent.

Oliver and Bonacini is quickly taking over the entire city.

Just make it more confusing, they might consider buying 'naming rights to Dundas Street and Station, so that you can go to an Oliver and Bonacini Restaurant in the Mall that fronts Oliver Street by exiting at Bonacini station.

So basically the same as before just with new names.
 
Blue Jays shop on Level one (next to Journeys) closed on Monday. I was there before they put up the construction hoarding, but sad news. They opened this store back in 2014:
