SO has really evolved, much more than Eatons.
-Directories in the mall (online directory not updated) shows that Indigo is opening in a 2-level space partioned from the former Target.
-OVO is opening across from Microsoft.
-Urban Kids is opening in the former HMV/Sunrise.
-Bonlook opened across from Zara.
-Soia and Kyo opened across from Apple.
-Zwilling J.A. Henckles opened near Hudsons Bay.
-Indochino relocated on the upper level near the centre court.
-La Senza is relocating across from its current location.
Upper Canada Mall (managed by Oxford) opened its food hall last week: Market & Co.
Here's an article on Market & Co. Perhaps it will provide some insight of what Square One's Food District might be like:
-Sugarfina is opening across Aritzia.
as speculated earlier in this thread, Chapters on Rathburn is closing in early 2019 and moving into the old Target in Square One and will be much larger
Pie Commission will be opening in the new Food District. Looks like a March 2019 opening.

What about the Indigo Spirit store?
Nothing from Chapters/Indigo about that store. One would suspect it will be closed when the new location opens.
I believe that Chapters is slowly being phased out as a brand. No new or replacement stores are opening as Chapters - like at Sherway Gardens when Indigo in the mall replaced a Chapters across the street.
The Chapters at the Oshawa Centre was renovated and re-branded as Indigo within the past year.
They are all going the way of the dodo. The smaller stores are being rebranded as indigo spirit I believe .
