The last two updates appear to have been shot on Sundays, so maybe the crews aren't working those days.
*Edit* I now see the site looks empty in previous updates too. Hmm.

The building next door at 55 Mercer just sold their units last weekend at prices that dwarf those from Nobu. Maybe someone realized that and they will try to cancel the existing purchase agreements and sell the units again at the market price point? Just speculating. That did happen at a few other buildings over the past few months.

Are the overhangs really that dramatic? In the renders they barely look like a few meters

I can assure you there is a bunch of activity on this site daily. They work from about 7-330 Monday to Saturday.
