Hi, I'm having difficulty finding a date/year for when the St. Clair Centre was built and/or opened (and when Loblaws/George Weston moved their offices in and out of the complex).

You mean the Weston Centre on St. Clair? Completed in 1975, here are two sources with some data:

I think the Weston tower proper at 22 St Clair might be 1975; but the corner tower and mall component was more like 1977/78...

Could be. Obtaining dates for buildings is a decidedly imperfect affair. To be honest, as time has worn on, I get less demanding in the level of precision I require for the date of completion anyways. For instance, I assume that one of the two sources that I mentioned gave the date as 1975, but published sources are often incorrect themselves by a year or two. It's a pain.
